Caramel Apple Cinnamon Roll Lasagna is fun and delicious combo of classic caramel apple pie and yummy cinnamon rolls. This awesome fall treat (just like this amazing Apple Crumb Cake) is delicious dessert, but it is great idea for easy breakfast casserole, too.
Surely you all know very well that I like to call my layered dessert creations- LASAGNA. I had so far No Bake Strawberry Jello Lasagna, White Chocolate Blueberry Lasagna, Caramel Pecan Lasagna, No Bake Summer Berry Lasagna, Chocolate Lasagna, Christmas Lasagna, Key Lime Pie Lasagna and Pumpkin Lasagna. But these were all creamy dessert with cookie or shortbread crusts, pudding and cheesecake layer and whipped topping.
For this Caramel Apple Cinnamon Roll Lasagna I had slightly different concept, but called it lasagna, again. This one is a twist on classic apple pie. Actually it’s like layered apple pie.
Instead of a classic pie crust I used cinnamon rolls. I cut each roll in a thin layer, than flatten it a bit more and arrange at the bottom of a baking dish. I topped it with mixture of diced fresh apples, sugar, corn starch and cinnamon. Than I drizzled caramel sauce on top of apple pie filling and then cover with another layer of flattened cinnamon rolls. However, considering that this is a layered dessert, I repeat all these layers once more.
At the end I got delicious Caramel Apple Cinnamon Roll Lasagna with three layers of cinnamon rolls, two layers of apple pie filling and caramel sauce, and as a bonus, there is sweet sugar icing on top.
It’s just the middle of summer, but I’m looking forward to fall baking season. I simply can’t resist wonderful apple creations with cinnamon and caramel. I had so many great ideas about new apple recipes, so I had to try at least one, although it’s just the July.
Also, this yummy Caramel Apple Cinnamon Roll Lasagna was perfect excuse to eat dessert for breakfast. Since it’s made with cinnamon rolls, this lasagna is perfectly acceptable breakfast casserole, right?!

Caramel Apple Cinnamon Roll Lasagna is fun and delicious combo of classic caramel apple pie and yummy cinnamon rolls.
Ingredients
- 2 cans cinnamon rolls
- 4 large apples- peeled and diced (Granny Smith or Golden Delicious)
- ½ cup sugar
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 tablespoon cornstarch
- ¼ –1/3 cup caramel sauce (or salted caramel sauce if you prefer)
Instructions
- Preheat the oven to 375 F and spray glass or ceramic 8 x 8 x 2 inch dish with nonstick spray( I used 7 x 9 x 2 inch ceramic dish).
- In a bowl stir together diced apples, sugar, corn starch, cinnamon and nutmeg to coat evenly.
- Cut cinnamon rolls in ¼ inch slices and then roll it out on floured work surface until thin. Dust it with flour because they are too sticky and they will fall apart when rolling out. You can dust your hands with flour and press it to thin it out if you find that easier.
- Arrange first layer of flattened cinnamon rolls at the bottom and sides of a dish. Press them with your hands to seal them well.
- Spread half of apples from the filling and drizzle 2-3 tablespoons of caramel sauce on top. Cover with another layer of flattened cinnamon rolls.
- Spread remaining apples and drizzle again with caramel sauce. Cover with remaining flattened cinnamon rolls.
- Cover with aluminum foil and bake 30 minutes. Then remove the foil and bake another 10-15 minutes until the top are golden brown.
- Cool at least 30 minutes, drizzle with icing(that came with cinnamon rolls) slice and serve.

In this, are the apples cooked all the way through? I don’t like apple desserts with crunchy cooked apples. Also, which cinnamon rolls did you use? My family likes the Grands cinnamon rolls.

Is the middle suppose to be doughy? That is how mine turned out and I even cooked for an additional 20 minutes
I made this yesterday and had the same issue. I had to cook it an additional 40 minutes. It was also a bit too bready for me.
The doughy middle layer turned me off. It tasted good but I will not make it again. I will stick to my traditional caramel apple pie. Too much time is spent flattening the rolls.
Looks good. But it is very time consuming rolling out the 1/4 cut rolls. Sticks to everything. The apples I cut in small pieces and they were still crunchy and the middle layer was doughy and soggy and the tip layer hard like day old bread. Definitely will ot be making thus again.

Turned out pretty good. Middle layer was gooey even though the top and bottom were done. I would leave out the middle layer next time.
This recipe was delicious! Based on comments about the middle layer coming out gooey, I decided to bake the middle layer of flattened cinnamon rolls first before incorporating into lasagne layers. It came out perfect – no gooey middle. Thanks for the recipe!

anyone try it with brown sugar instead of white? What about adding walnuts? These are ingredients I use in cinnamon rolls.
I used brown sugar, same amount and it was awful sweet, maybe half next time.
What about making a single recipe (not doubled) in 9×13 pan?
This is recipe for 8×8 inch dish. The dish in the picture is 7 x 9 inch so it has rectangular shape.

Hi Jannie, we eat the whole lasagna first day.But I think you can cover it and store it in the fridge and reheat if you like, just cover with aluminum foil if reheat it in the oven.

I just made this dessert and the middle turned out undercooked and doughy. If I make it again I will cook it longer with the foil on. I used an 8 x 8 pan.

Hi Sue, slice them immediately when you take them out from the fridge, don’t separate them and use thin sharp knife, it will be OK, don’t worry.
I just took this out of the oven and it smells amazing. (how can you go wrong with a sugar/cinnamon smell?) I did have trouble cutting the rolls in two.. You made it look so easy! Yes, my knife was super sharp but the rolls just weren’t very big.I didn’t have enough to finish covering the top. I used a 9×9 so maybe that was the difference? Anyhow, can’t wait to dig into them tonight. I think next time I will leave them whole and flatten and go with 3 cans.

Good recipe, but I would suggest a larger dish for baking. The 8×8 is just too small and the middle wides up gooey. I baked it per the instructions, and I had to bake it an extra 30 minutes on top of that. I think if it was not so thick, it would cook Moreno evenly.
In the first “long” photo there are 9 cinnamon rolls (3 rows of 3) but in the last photo there are only 6 cinnamon rolls (2 rolls of 3)…which is correct? If you want to double it for a 13 x 9 pan is the cooking time the same??? thanks…looks yummy!
Yes. Both answers are correct. There are 9 pieces in the bottom layer and 6 on top. If you noticed, the bottom layer goes up the sides of the dish a bit, whereas the top layer does not need to do that.
And overlap to create a stronger bottom.
Was excited to try this but all the “Gooey” comments scare me….
My daughter requested this for her birthday and I made it per the recipe but it wasn’t done at all. I baked it for another 45 min. The end result was good though.

OMG I served this tonight for book club… it was delish. I used a 9 x 12x 2 pan so instead of layering a few times, I only did a bottom layer of rolled 1/4″, spread my apple mixture- with about 6-7 apples and then caramel sauce and then a top layer of the 1/4″ cinnamon rolls again. It cooked well and smelled even better than the rolls do when you make them! Apples… some people did ice cream on top… I only with I had fresh whipped cream!!! Def try this recipe!

Going by what Fran mentioned with a bottom layer, apple filling middle and a top layer, everything worked out well, in a 9 x 13. I think I will give this a try for the next dish to pass event with these modifications. Reading through a lot of comments, many people said it was too gooey otherwise, with the original directions. Thank you for your recipe, it all sounds delicious to me.

I followed the recipe to a T, however when we cut into it the middle layer of cinnamon rolls were not cooked and still gooey. I cooked for 30 minutes and then took off the tin foil and then another 15. Any ideas?

This recipe was terrible. The cinnamon roll pieces turned to a wet mush when the apples cooked down. It was horrible. Pre-cooked apples or canned pie filling would work better. It was like picking wet, mushy bread off of cooked apples. No thank you.
