How to Make No Bake Peanut Butter Granola Cups:

To make Peanut Butter Granola Cups in a bowl combine granola, chopped peanuts, peanut butter and honey.

Grease cupcake pan and divide the mixture in 12 cups. Press the mixture well to hold together and make a dent in the center of each cup. Freeze for a few minutes, until the cups are firm.

Then melt peanut butter and pour int the center of each granola cup. Now, freeze again until firm. Finally, melt dark chocolate and coconut oil and spoon melted chocolate on top of peanut butter. Chill, until chocolate has set.

Description

Ingredients

  • 2 ½ cups granola
  • 1 cup peanuts-chopped
  • 3 Tablespoons peanut butter
  • 3 Tablespoons honey (or more if needed)

Filling:

  • 1 cup peanut butter-melted
  • Topping:
  • 12 oz. dark chocolate-finally chopped
  • 1 Tablespoon coconut oil

Instructions

  1. To make Peanut Butter Granola Cups, in a bowl combine granola, chopped peanuts, peanut butter and honey. If the mixture is too dry add more honey to get sticky consistency of the mixture.
  2. Grease cupcake pan and divide the mixture in 12 cups. Press the mixture well to hold together and make a dent in the center of each cup. Freeze for 5-10 minutes, until the cups are firm.
  3. Then, melt peanut butter and pour int the center of each granola cup. Now, freeze for another 5-10 minutes, until firm.
  4. Finally, melt dark chocolate and coconut oil and spoon melted chocolate on top of peanut butter. Chill until chocolate has set.
  5. Store in the fridge in air-tight container., or freeze for longer storage.

Lots of people saying these aren’t “healthy” because they are high in calories.
Just asking that you think about others for a minute. Everyone doesn’t have the needs you do.
I made these for a friend who is pregnant and losing weight because of awful morning sickness. They contain exactly what her doctor is advising her to eat – oats, peanut butter, honey. She’s been eating them for breakfast and snacks, and she’s actually up five pounds. This recipe has been a great help to her, and according to her doctor, exactly what she needs for health.
So perhaps you should think about others before you make judgments.

High in clories so great as an energy treat before a hike, ski, etc… Remember these are treats!! don’t use store bought granola (high ni sweetener), use raw PB, local honey or maple syrup.. I used a mix of old fashioned oates, hemp hearts, chia seed, pumpkin seed, sesame seed in place of granola… also made them mini size or a more modest portion.

Hi Mackenzie, I used baked granola with honey. If you use oats you’ll probably need more honey and peanut butter.

I used a mini muffin pan!! Worked great! I wasn’t worried about calories, I just wanted smaller bites for my Littles!! They tend to leave half of everything sitting on the table. Having grand babies is a learning experience! They loved these!

Helen, I made these this morning with rolling oats, milk chocolate and omitted the nuts. I used mini tins. It made 24. They are so simple and amazing. I just used about a tablespoon more of peanut butter to hold them together better. They shaped very well in the tins and after the final freeze when you top with chocolate, they popped out easily with a butter knife. ?

I do have one family member that can’t eat peanuts or peanut butter. Is there a way to omit it in the granola and still have it work. Also add in sim craisins? I know the peanut butter binds it just not sure what I could use in place of it.

I haven’t tried yet but I already have so many ideas for different varieties. I have so many muffin tins, different types of chocolates, nuts, nut butters, natural syrupy sweeteners including honey of course. I’m going to have a field day with this recipe especially with my mini tins. I feel that cinnamon would work so well with this. I won’t even bother with granola as we make our own hear and have lots of rolled oats. Oh that reminds me how I need to add chia seeds and hemp hearts too into the oats mix. I have flax seeds too. This is going to make so many kinds of great snacks but I think I need to get more maple syrup here as I don’t like honey that much. It will be like having so many varieties of Kind bars or my favorite Nature Valley Sweet and Salty granola bars. I could even break up some pretzels onto the chocolate topping. What a great idea you introduced here.

These are amazing!! Just a little tip I learned after several unsuccessful tries in getting them to stick together to look like the picture…I put all the ingredients in a pan and heated it on low while I stirred. I then scooped them into the muffin pan and put in the freezer for about 30 minutes. This made them stick together perfect!! Everyone in my family loves these!

These are a great snack after a workout! This is third batch I’ve made and just picked up on instruction to use “cupcake” pan! I’ve been using a ‘mini-muffin’ pan, which yields 24-bite size cups…that also takes the calories per cup down to about 187 ( using the ingredients calculator)

I made this recipe and put them into a mini muffin tin making the calorie count much more manageable at 187 calories per peanut butter cup, delicious, loved it!!

Love these, but we make them in the mini cup version not as many calories I say prolly half as much 144 calories.

This was really easy and tasted great. I wish my freezer was wider to hold the muffin tray though! If I make it again I would use a mini muffin pan because of the tray size and they are so rich!

These look great, however the honey prevents this recipe from being vegan. Like commented before, use agave instead of honey.

Yum! Looks delicious. Please consider editing recipe to use maple syrup or agave in place of honey to make these vegan ?. Or since
“vegan” is in your recipe description, maybe something along the lines of “(or honey if not vegan)”.

These look absolutely DELICIOUS! Saved this recipe as I’m defo making these.
I wanted to mention that in order to make this recipe vegan, simply switch out honey for agave nectar or maple syrup. Too easy! 😀

I added ground flax seed since one of my littles has constipation issues. I also used reduced fat PB and it was impossible to “pour.” It worked fine, I just had to scoop it out instead of pour.

These are SO good. So easy to modify too. I used half the chocolate (6 oz 88% dark chocolate) half the peanut butter filling and left out the coconut oil to cut down on calories and I don’t feel like I missed out on anything. Thank you for sharing this!

My boyfriend is allergic to peanuts so I used peanut free nut butter and chopped pecans instead. And to make it truly vegan, I used brown rice syrup instead of honey ??

Delicious! Very very rich, more like a desert. I wish I used mini cups because it’s such a large serving. Only used about 3 oz chocolate chips and that was plenty.
