Homemade Double-Layer Fresh Peach Dessert
You will, of course, need the oven for just a short time to bake the mixture of sugar, graham crackers crumbs and butter which make the tasty crust of this treat. This dessert doesn’t implicate much active time. But you have to plan it in advance because you have to wait for a few hours for it to cool of and for the jelly to thicken before you can continue your work.
And another very important thing, it is not called „Fresh Peach Delight“ for nothing. I really highly recommend that you use fresh peaches now while they are in the season. The smell and taste of this juicy fruit which stays fresh and unbaked in the filling can really not be replaced with canned peach.

Description

Ingredients
For graham cracker crust and topping:
- 2 cups crushed graham crackers
- 1/2 cup unsalted butter-melted
- 6 tablespoons sugar
For peach filling :
- 5 cups fresh peaches-peeled and diced into 1 inch peaces (about 6–7 medium peaches)
- 2 cups water
- 1 cup sugar
- 3 tablespoons cornstarch
- 1 (3 oz.) package peach jello
For cheesecake layer:
- 8 oz. cream cheese-room temperature
- 3/4 cup powdered sugar
- 1 teaspoon vanilla
- 1 (8 oz) carton cool whip
Instructions
- Preheat oven to 375 F. In a bowl combine crushed graham crackers and 6 tablespoons sugar. Add melted butter and stir with a fork until all crumbs are moistened. Take out 1 1/2 cup crumbs and set aside for topping.
- Press the remaining crumbs into the bottom of a 13×9 inch baking dish bake for 8 minutes. Set aside to cool.
- In a sauce pan combine water, 1 cup sugar and cornstarch, stir well and bring to a boil. Add the package of peach jello and stir to dissolve. Remove the mixture from heat and allow to cool completely, then add diced peaches, stir and pour over cooled crust. Place in the fridge until set (about 4 hours).
- Cream together powdered sugar, cream cheese and vanilla. Fold in cool whip and spread over the top of peach filling. Place in the fridge to set and top with the 1 1/2 cup reserved graham cracker crumb mixture before serving.

Is it “take out 1 & a 1/2 cup” or “1”, “1/2 cup” if you take out 1 1/2 cups of the graham crackers you are left with 1/2 a cup for the crust…just wondering before I make it. I looks yummy!

Hi Carol, the graham cracker, sugar and butter mixture will be crumbly, so you should get much more than two cups and you can take out 1 and 1/2 cup(not firmly packed) and reserve it for topping.
I think you would want 1 1/2 cups on the crust and 1/2 cup for the top. 🙂
this is true—1/2 cup for the topping and 1 1/2 for the crust. JUST made this and it is AMAZING! used the last of my fresh peaches and was afraid of the jello—but OH MY DELICIOUS!

Just finished making this. Looks delicious in the picture. Hoping it’s yummy for my reunion tomorrow. I added 16 Oz of cool whip because 8 didn’t seem like enough..my layer of the cool whip mixture is very thin on top, not thick and fluffy like the picture. Could I have over whipped it?
mine was also thin…but delicious! if you double the cool whip you may want to double the cream cheese and sugar or you will ruin the intended flavor of the topping

The dessert was wonderful, everyone loved it! I used half the amount of swerve in place of the sugar to lower the carbs and cut the water down to 1 1/2 cups. I also did not have the peach jell-o so I instead used 1 pkg. of plain gelatin (pre-dissolved).
My cool whip ctopping was not enough to cover the 9×13 diah…was this an error?
This recipe is way off on recipe proportions. The crust barely covered the bottom. The cream cheese topping barely covered the peach filling and disappeared into it. The 9×13 dish was way too large for this recipe and looked nothing like the thick layers in your picture! Wasted my ingredients! I am an experienced cook and knew it was not right when I read the amts for the crust vs the topping!
I keep seeing these comments but mine turned out just fine in a 9X13 pan. The only thing I did differently was make a little bit more graham cracker mixture because I wanted my crust thicker. Everything else was just like the picture. Are ya’ll over mixing you whipped cream?
I’m not really sure why others struggled with this recipe. I had no trouble filling a 9X13 pan. I did make a little bit extra of the graham cracker mixture because I wanted my crust to be a little bit thicker. I find that if you measure fruit cup by cup you won’t get an accurate measurement. I used a big measuring bowl and did just over five cups of peaches. I had more than enough to fill the pan. I also had no trouble with the cream cheese/ whipped cream mixture. There was plenty to go around. Just make sure your cream cheese is very soft so that it is easier to fold into your whipped cream. If you over mix it that can make it fall flat and look like less. I give this recipe two thumbs up!

This was soooo good!!! Might use 12 oz Cool Whip instead of the small 8 oz as it was very stiff for spreading and not as thick as appearing in the picture. Even non-dessert eaters went back for seconds!

Peach Jello is almost impossible to find… can you suggest another flavor to substitute… maybe lemon or orange???
I’m making this dessert tomorrow. It will be my 3rd time making it. Once last summer and twice this summer. I followed the recipe to a tee and had no problem. I substituted peach jello for orange jello as I don’t think we have peach jello in Canada. I’ve looked at every grocery store around and no one seems to carry it. Orange was just fine. I also used a 13″x9″ baking dish and had no problem. This is a delicious dessert. Definitely a keeper! Thank you.
