Memorial Day is just around the corner and it’s the unofficial beginning of summer, too. Definitely summer is perfect time for light and refreshing sweet treats.
To tell the truth, we all like to eat delicious food and desserts. However no one is willing to heat the oven when the weather is warm. But don’t worry!!! NO BAKE DESSERT RECIPES can be really awesome, too!!!
And my favorite type of all easy no bake sweet treats is DESSERT LASAGNA. So far I’ve shared much more than a few here on my blog.
After the last one, No Bake Strawberry Jello Lasagna (which was great, by the way) I created another dessert lasagna.
Incoming holidays, Memorial Day and 4th of July inspired me to make this delicious, festive and fun RED WHITE and BLUE DESSERT.
Speaking about red, white and blue, let me tell you more about this layered dessert.
First one, RED VELVET LAYER at the bottom is graham cracker crust flavored with strawberry jam.
Second is white CHEESECAKE LAYER with some fresh strawberries.
Dark blue layer is BLUEBERRY JELLO SALAD. It’s mixture of blueberry pie filling, crushed pineapple and gelatin.
Top layer is just simple whipped cream garnished with a lot of fresh strawberries and blueberries, drizzled with white chocolate.
Three-day weekend upon us is perfect time for you to try this easy No Bake Summer Berry Lasagna recipe dessert. It’s really simple to make, it doesn’t take much of active prep time. But It’s the best to be made a day before serving because it need 5-6 hours to set.

Description
No Bake Summer Berry Lasagna is EASY SUMMER DESSERT RECIPE for refreshing sweet treat. This is perfect idea for Memorial Day and 4th of July dessert.
Ingredients
For Whipped Cream:
- 1 and 2/3 cup heavy cream-chilled
- about 1/3 cup powdered sugar (to taste)
- 1 teaspoon vanilla
Red Velvet Crust:
- 3 cups graham cracker crumbs
- ¼ cup strawberry jam
- ½ cup+ 2 tablespoons unsalted butter-melted
- Red gel food coloring
For Cheesecake Layer:
- ½ cup unsalted butter-softened
- 8 oz. cream cheese-softened
- 1 cup powdered sugar
- 1 teaspoon vanilla
- 2/3 cup diced fresh strawberries
- 1 cup of whipped cream
For Blueberry Jello Salad Layer:
- 2 (3 oz.pckg) berry blue Jello (or other flavor to your taste)
- 1 and 1/4 cup boiling water
- 2 cups blueberry pie filling
- 1 cup of canned crushed pineapple-drained from juice (if use pineapple chunks, pulse it in a food processor to get fine crushed pieces)
Topping:
- 2 ½ cups whipped cream
- Fresh strawberries halved
- Fresh blueberries
- ¼ cup chocolate chips
Instructions
To make the crust:
- Combine graham cracker crumbs, strawberry jam, melted butter and red food coloring( drop the color directly in melted butter or jam, it will dissolve better).
- Mix until evenly moistened. Press the mixture in the bottom of 13 x 9 x 2 inch dish. Place the crust in the freezer to firm.
Filling:
- First, make the whipped cream. In a bowl beat chilled heavy cream until soft peaks form. Add powdered sugar and vanilla and continue mixing until really STIFF peaks form. Measure out 1 cup of beaten whipped cream for cheesecake layer. Cover remaining whipped cream and reserve for topping.
- To make cheesecake layer cream together softened cream cheese, powdered sugar, vanilla and softened butter. Mix in 1 cup of whipped cream(do not use soft whipped cream, cheesecake filling have to be thick or it won’t hold dense blueberry jello salad layer on top)
- Gently fold in diced strawberries and spread over the crust. Place in the fridge to set.
- To make the blueberry jello salad layer in a large bowl place 6 oz. berry blue Jello gelatin mixture. Pour 1 ¼ cup boiling water and stir for a few minutes until the gelatin dissolved completely. Set aside to cool for 15-20 minutes, then stir in crushed pineapple and blueberry pie filling. Wait until it’s cooled to room temperature and soft set, or place in the fridge to speed the process but stir from time to time.
- Spread blueberry jello layer over chilled cheesecake layer. Do not pour warm blueberry jello over cheesecake layer, it will melt it.
- Place in the fridge to chill until jello layer is set completely .
- Top with remaining whipped cream. Before serving arrange fresh berries on top. Melt white chocolate chips, transfer melted chocolate to a ziplock bag, cut off the corner and drizzle over the top of lasagna.
- Store in the fridge.

For those having trouble with the blueberry layer, put the pineapple in a colander. With a spoon gently push the plneapple against the side so that the majority of the juice drains out. I also made the blueberry layer first to give it more time to thicken. Thanks for the recipe!

Don’t waste your time!!! This takes hours to make – looks gorgeous… it is TASTELESS!! And it’s under the wrong heading- there’s no chocolate except the drizzle you put on the top. Surprisingly disappointing & SO glad I didn’t make it for guests… my husband & I ate a piece- the garbage disposal gets to eat the rest!!☹️?(& yes I followed the recipe to the letter!)
Your Summer Berry Lasagna recipe sounds amazing BUT you are missing the amount of butter in the cheesecake layer of the recipe. It says 1/2 unsalted butter. 1/2 what? Cup, tbsp, etc. Can’t wait to make this!

Can you make it without pineapple
Hi Chris,I haven’t tried without pineapple. Maybe you should try to substitute with 3/4 cup more of blueberry pie filling or mashed strawberries.

Hi Tempie,you can omit pineapple, but jello layer will be very firm. Maybe you should substitute with 3/4 cup of mashed strawberries. Or add 2 cups boiling water in Jello instead of 1 1/4 cup. But I haven’t tried that way, I’m just guessing.

About how long do we chill each layer? I am trying to figure out how much time this amazing dessert will take me to make.
Crust will firm in the freezer while you make cream cheese layer. Cream cheese layer will firm in 1-2 hours in the fridge,and during that time make and cool to room temperature jello mixture. Jello layer will completely set in 3-4 hours.

just an FYI…since I was unable to find “gel” food coloring in my local stores I ended up just using the regular liquid form and it colored the graham cracker crust just fine. I dropped it into the melted butter and mixed with graham cracker crumbs… worked out fine.

How much red gel food coloring? Betty Crocker red gel is about .7 oz per tube

I will be making this for the first time tomorrow. I bought the Wilton Gel (icing) color in the very small jar. I think the Betty Crocker gel in the tube is for writing on cakes.

Cannot get the blueberry layer to set. Have tried it twice now. On the first attempt, it sat overnight and was still completely liquid; I was able to pour it right out of the pan. Second attempt it was gelled, but nowhere close to set after 8 hours. Followed instructions to a tee. Any thoughts about what might be happening here?
Hi Sandy, did you use canned or fresh pineapple? Fresh pineapple can’t be used with Jello.
I put the crust and cheesecake in the freezer for a couple hours to firm up. I also left the jello/pie filling/pineapple mixture in the mixing bowl and put it in the fridge for 5-8 minutes to gel a little before pouring it on top of the now frozen cheesecake layer. Then, I left it in the fridge overnight to form and topped it with the whipped cream and fruit in the morning. The first time I made this recipe, the blueberry layer was super wet and melted and mixed in with my cheesecake layer.
YOur recipe sounds delicious. But ingredients say chocolate chips not white chocolatechips. Just FYI.

I would say the description “easy” is not accurate at all. This takes a LOT of time to make so be ready for that. I’m in the middle of making it now and I’ve tasted each layer as I’ve made it and it is amazing, so I’m hoping the time I’ve put into it will be worth it! I’m pretty sure it will be with how good each layer is I tasted, but you have to really pay attention to each step so it does take some time. I’m really excited to try this for a 4th of July party tomorrow!

I’ve made this several times and it is absolutely delicious. Even if you don’t like pineapple, you should use it as you can’t taste it but it adds just enough to make the perfect layer. Making it again for tomorrow.

I made this as instructed, and it was delicious. But then I made it again with fresh blueberries instead of the blueberry pie filling because I wanted something a little lighter and fresher tasting … and it was even more amazing!

I can’t wait to try this. I plan on making it today. I did notice in checking the ingredients that you say chocolate chips – but there is not chocolate on it. But in the directions you so say melt the white chocolate chips . Just wanted to let you know

This was amazing. I just served it for July 4th dessert and it was a huge hit. Not too sweet and absolutely delicious!!!
This recipe just didn’t work out for us. The blue layer had an odd cinnamon mixed with a sour flavor to it. The crust was too thick and stuck to the dish (maybe I pressed it down too hard). I’m sure others may like it but for us it just had too much going on-sweet, cheesey, sour. I felt like I put in a lot of time and ingredients too. ? It was pretty to look at but I won’t make it again. I didn’t add pineapple but did add 2 Cups of boiling water and it set up fine.
This looks so easy to make. Plus the layers are so beautiful. Such a great idea! I will definitely try this. Thank you for sharing this 🙂

This is delicious! Big hit at our family 4th of July gathering. I will definitely make this again. Great flavor, beautiful layering. I didn’t have the fruit or chocolate for the top and it was perfect without and shaved off the time.
I was actually surprised how quickly I was able to make it (but I enjoy baking) and it’s a relaxing activity for me so time doesn’t matter.
