Very Berry Dessert Lasagna is an easy, no bake summer dessert recipe with fresh strawberries and blueberries. Strawberry and Blueberry Dessert Lasagna

This strawberry and blueberry Dessert Lasagna is perfect summer dessert recipe- light, easy and no oven required!!! It’s a combo of my No Bake Strawberry Jello Lasagna and White Chocolate Blueberry Lasagna.

Very Berry Dessert Lasagna is easy, layered, no bake dessert. First, bottom layer is Oreo crust. It’s just a simple mixture of crushed Golden Oreos and melted butter, pressed in the bottom of the pan.

Oreo crust is followed by delicious strawberry mousse made with strawberry Jello, Greek yogurt, whipped cream and diced fresh strawberries.

White layer in the middle is no bake cheesecake. Then, there’s blue layer-fresh blueberry mousse with Greek yogurt, berry blue Jello and whipped cream, too.

Strawberry and Blueberry Dessert Lasagna

All these delicious layers are topped with more whipped cream and white chocolate curls. White chocolate is perfect match with fresh summer berries. Chocolate curls complement the flavors and makes awesome texture combo with smooth and creamy mousse and cheesecake layers.

However, this Strawberry and Blueberry Dessert Lasagna is quick and easy dessert recipe for delicious summer treat. Also, red, white and blue dessert is definitely fun and festive idea for 4th of July party.

Very Berry Dessert Lasagna is easy, no bake summer dessert recipe with fresh strawberries and blueberries.


Ingredients

For Oreo Crust:

  • 36 Golden Oreo cookies
  • ½ cup unsalted butter-melted

For Strawberry Layer:

  • 4.5 oz. strawberry flavored gelatin (like Jello)
  • 2/3 cup boiling water
  • ¾ cup strawberry Greek yogurt-cold
  • 1 cup diced fresh strawberries
  • 2 ¼ cups Cool Whip

Cheesecake Layer:

  • ½ cup unsalted butter-softened
  • 1 cup powdered sugar
  • 8 oz. cream cheese-softened
  • 1 ½ teaspoon vanilla
  • 1 ¼ cup Cool Whip

For Blueberry Layer:

  • 4.5 oz. berry blue gelatin (like Jello)
  • 2/3 cup boiling water
  • ½ cup blueberry Greek yogurt-cold
  • 1 cup fresh blueberries
  • 2 ¼ cups Cool Whip

Topping:

  • 2 ½ –3 cups Cool Whip
  • 6 oz. white chocolate bar or block-to make the curls
  • ½ cup fresh blueberries
  • ½ cup diced strawberries

Instructions

Oreo Crust

  1. To make the crust ground whole Oreo cookies with the filling in a food processor to make fine crumbs.
  2. In a bowl stir together ½ cup melted butter with Oreo crumbs until evenly moistened, then press the mixture in the bottom of 9 x 13 x 2-inch dish, set in the freezer to firm while making next layer.

Strawberry Layer:

  1. In a large heath proof bowl place strawberry Jello, add 2/3 cup boiling water and stir to dissolve completely.
  2. Whisk in ¾ cup cold strawberry Greek yogurt until combine, then stir in diced strawberries. Add 2 ¼ cups Cool Whip and mix until combine evenly.
  3. Pour the mixture over Oreo crust layer and smooth the top. Place in the freezer for 25-30 minutes to set.

Cheesecake Layer:

  1. In a bowl cream together ½ cup softened butter, 8 oz. softened cream cheese, 1 cup powdered sugar and vanilla until smooth. Add 1 ¼ cup Cool Whip and mix to combine.
  2. Spoon over strawberry layer and gently spread into an even layer. Place in the freezer for 10 minutes to firm.

Blueberry Layer:

  1. In a large bowl place berry blue Jello, add 2/3 cup boiling water and stir to dissolve completely.
  2. In a food processor pulse blueberry Greek yogurt and fresh blueberries. Then, pour the mixture in the Jello and whisk to combine.
  3. Add 2 ¼ cups Cool Whip and mix until combine evenly. Pour the mixture over cream cheese layer and smooth the top.

Topping:

  1. Refrigerate until set, then spread 2 ½ -3 cups whipped cream on top.
  2. To make the curls, carefully draw a vegetable peeler across the broad surface of a bar of white chocolate at room temperature. Sprinkle curls on top. Refrigerate for 2 more hours before serving, or overnight.
  3. Garnish with fresh blueberries and diced strawberries before serving.
  4. Store in the fridge.

Notes

You can use thawed whipped topping like Cool Whip (you’ll need about 8 ¾ cups) or make homemade whipped cream. Beat 4 ¼ cups chilled heavy cream with 2 teaspoon vanilla until soft peaks form. Add powdered sugar to taste and continue mixing on high speed until STIFF PEAKS form.

This is a parfait not a lasagna. There are no noodles in this. One of my biggest pet peeves is calling something lasagna that is clearly not a lasagna.

It’s not sugar-free gelatine, it’s 4.5 oz. Jello-sweetened gelatine.
(3 oz. Jell-o is for 4 x 1/2 cups serving)

Yes use 1 and 1/2 box. 3 oz. won’t be enough to set the filling and with 6 oz. it might be to rubbery and not creamy enough

I made this with heavy cream and regular sugar instead of cool whip, and light greek yogurt (80 cals per half cup) every thing else was according to the recipe. The whole pan contains 11,156 calories, so if you divide it into 20 servings it’s 557 cals per serving. Bad time to be on a diet 🤣

I am still unclear as to just how much of each jello (strawberry and berry blue) is needed. . . the recipe indicates 1 1/2 (3oz) box of each does that mean 6 total ounces – 3 oz. per flavor? or, do you mean 1 1/2 tablespoons, or cups??? But, you indicate in a comment that a total of 4.5 oz. total jello are needed. How do you arrive at 4.5 oz? Please clarity just how much of each jello flavoring we should be using in terms of cups, or spoonfuls, or oz – thanks so much!

Unless I’m reading this wrong, it looks to me, like you need one whole 3 oz box of blue jello, plus another half of a 3 oz box of blue jello. And the same for the strawberry jello, one whole 3 oz box, and half of another 3 oz box.

This looks really good for 4th of July! The berry Lasagna. I was just wondering if I use real heavy cream and make my own, can I make it the night before? Or will the real whipped cream fall flat during the night. I always thought you had to make real whipped cream when you were going to use it. Not the night before.

I’ve made this twice, everyone loved it!! Both times it did not fit in my 9 x 13 pan.

I had a problem with this dessert. I used a 9x13x2 pan but it wasn’t deep enough. I had no room to add the blueberry layer. The strawberry layer and cheesecake layer were delicious and everyone liked it. If I make it again, I will use a deeper dish or use two smaller dishes.

Couldn’t find vanilla oreos so bought another brand of vanilla cookies sandwiched with icing. Need two packages of cookies @ $8.00 each which makes this dessert rather expensive when you add in the cost of the yogurt and the fresh berries, etc.

My daughters birthday is coming up soon, and I wasn’t sure what cake to make. She wants a homemade cake, and I was struggling with a cake that was going to be okay to make, and not turn out bad. I think I found the cake, plus it being a “lasagna cake” makes it so funny! I know she will love it
