How to Make No Bake Peanut Butter Granola Cups:
To make Peanut Butter Granola Cups in a bowl combine granola, chopped peanuts, peanut butter and honey.
Grease cupcake pan and divide the mixture in 12 cups. Press the mixture well to hold together and make a dent in the center of each cup. Freeze for a few minutes, until the cups are firm.
Then melt peanut butter and pour int the center of each granola cup. Now, freeze again until firm. Finally, melt dark chocolate and coconut oil and spoon melted chocolate on top of peanut butter. Chill, until chocolate has set.

Ingredients
- 2 ½ cups granola
- 1 cup peanuts-chopped
- 3 Tablespoons peanut butter
- 3 Tablespoons honey (or more if needed)
Filling:
- 1 cup peanut butter-melted
- Topping:
- 12 oz. dark chocolate-finally chopped
- 1 Tablespoon coconut oil
Instructions
- To make Peanut Butter Granola Cups, in a bowl combine granola, chopped peanuts, peanut butter and honey. If the mixture is too dry add more honey to get sticky consistency of the mixture.
- Grease cupcake pan and divide the mixture in 12 cups. Press the mixture well to hold together and make a dent in the center of each cup. Freeze for 5-10 minutes, until the cups are firm.
- Then, melt peanut butter and pour int the center of each granola cup. Now, freeze for another 5-10 minutes, until firm.
- Finally, melt dark chocolate and coconut oil and spoon melted chocolate on top of peanut butter. Chill until chocolate has set.
- Store in the fridge in air-tight container., or freeze for longer storage.

I made these for a friend who is pregnant and losing weight because of awful morning sickness. They contain exactly what her doctor is advising her to eat – oats, peanut butter, honey. She’s been eating them for breakfast and snacks, and she’s actually up five pounds. This recipe has been a great help to her, and according to her doctor, exactly what she needs for health.

High in clories so great as an energy treat before a hike, ski, etc… Remember these are treats!! don’t use store bought granola (high ni sweetener), use raw PB, local honey or maple syrup.. I used a mix of old fashioned oates, hemp hearts, chia seed, pumpkin seed, sesame seed in place of granola… also made them mini size or a more modest portion.

Hi Mackenzie, I used baked granola with honey. If you use oats you’ll probably need more honey and peanut butter.
I made it with old fashioned oats. Definitely had to increase the PB and honey, but they are delicious. Even if not super healthy. Nothing processed at least!

Has anyone used a mini muffin pan instead to lower the calories. Would this recipe just make more minis?

Helen, I made these this morning with rolling oats, milk chocolate and omitted the nuts. I used mini tins. It made 24. They are so simple and amazing. I just used about a tablespoon more of peanut butter to hold them together better. They shaped very well in the tins and after the final freeze when you top with chocolate, they popped out easily with a butter knife. ?

Delicious as is! But I made a half batch of the recipe in a mini muffin pan and I got about 20 mini sized cups.
I haven’t tried yet but I already have so many ideas for different varieties. I have so many muffin tins, different types of chocolates, nuts, nut butters, natural syrupy sweeteners including honey of course. I’m going to have a field day with this recipe especially with my mini tins. I feel that cinnamon would work so well with this. I won’t even bother with granola as we make our own hear and have lots of rolled oats. Oh that reminds me how I need to add chia seeds and hemp hearts too into the oats mix. I have flax seeds too. This is going to make so many kinds of great snacks but I think I need to get more maple syrup here as I don’t like honey that much. It will be like having so many varieties of Kind bars or my favorite Nature Valley Sweet and Salty granola bars. I could even break up some pretzels onto the chocolate topping. These are amazing!! Just a little tip I learned after several unsuccessful tries in getting them to stick together to look like the picture…I put all the ingredients in a pan and heated it on low while I stirred. I then scooped them into the muffin pan and put in the freezer for about 30 minutes. This made them stick together perfect!! Everyone in my family loves these!
These are great! And they are a healthy option for a sweet treat. Much better and less processed than a can bar. Probably not for someone trying to lose weight though. I make these for my kids.

I added ground flax seed since one of my littles has constipation issues. I also used reduced fat PB and it was impossible to “pour.” It worked fine, I just had to scoop it out instead of pour.
These are SO good. So easy to modify too. I used half the chocolate (6 oz 88% dark chocolate) half the peanut butter filling and left out the coconut oil to cut down on calories and I don’t feel like I missed out on anything. Thank you for sharing this!

Hi, they look amazing. I know it’s a ‘non-bake’ recipe, but I’m interested in making the base crunchy and more solid. Would it work to put the base-cups in the oven, or would it need something else to bind and bake?
