What You’ll Need For This Bread Recipe?
The list of ingredients seems intimidating at first glance, but that are all simple ingredients. These are all basic ingredients and are repeated several times in each part of the recipe.
- You will need:
- All-purpose flour- for the banana bread part, but for the filling and topping as well
- Granulated sugar and brown sugar, and a powdered sugar, too if you want to add the glaze to your bread
- Eggs-for stability, and tender texture as well.
- Baking soda, baking powder and salt
- Dairy- butter, sour cream, cream cheese, and milk for the glaze
- Vanilla extract and cinnamon-for the flavour
- Bananas- you will need 2 large bananas for this recipe to make 1 cup mashed bananas
- Pecans and chocolate chips are totally optional. If you don’t like the crunch in your bread, just skip these two. Also you can add more than it said in the recipe, it’s totally up to your taste.
How to Make Homemade Banana Bread?
To make pecan cinnamon streusel topping, in a bowl combine ½ cup all-purpose flour, 2 Tablespoons light brown sugar, 2 Tablespoons sugar, 1 teaspoon ground cinnamon and 2 Teaspoons chopped pecans, whisk with a fork. Next, add 3 Tablespoons melted butter and whisk until everything is evenly moistened and coarse crumbs are formed. If the mixture looks sandy, squeeze it with your hand to make larger clumps, then crumble with your fingers into a pea size crumbs. Set aside.
To make the banana bread batter, in a small bowl whisk together dry ingredients: all-purpose flour, baking soda, baking powder, salt and cinnamon, set aside.
In a large mixing bowl combine softened butter, sugar and vanilla extract and mix for 2 minutes. Next, add egg, egg white (reserve egg yolk for the cream cheese), mashed bananas and sour cream and mix well.
Add flour mixture and mix to combine. Scrape the bottom with the spatula to make sure everything is evenly incorporated. Finally add chopped pecans and chocolate chips and mix to combine. Set aside.
To make the cream cheese filling, in a medium bowl beat softened cream cheese, 3 Tablespoons sugar, vanilla extract and 2 Tablespoons flour and egg yolk. Set aside.
To assemble the bread, line the bottom and sides with parchment paper. Leave large overhang of paper on the sides so you can easily lift the bread from the pan later.
Spread about half of the banana bread batter in prepared pan and smooth the top. Spoon cream cheese mixture on top but don’t go all the way to the edges. Spoon remaining banana bread batter over the cream cheese. Gently smooth using the back of the spoon. Sprinkle with streusel crumbs and bake for about 55-65 minutes at 350 F, until the center has set. If it starts browning too much tent the top with aluminium foil.
To make the glaze, whisk powdered sugar with vanilla extract and milk. Start with 1 tablespoon of milk and add a teaspoon at the time until get desired consistency. Drizzle over cooled bread.
Enjoy!

Very informative
I made this exactly as the recipe states and used the size loaf pan it stated. I put it in the oven and set the timer for 45 minutes to check it but I smelled burning before then. I opened the oven to a plume of smoke and banana bread and crumb topping burning on the bottom of my oven, on the racks and bubbling out of the pan sliding down the sides. I cleaned up what I could and put a sheet tray under it. I continued cooking it since I spent so much time making it and it took almost two hours to finish baking. What happened? Should this recipe be for making two loaves?
I came to the comments as I have the same problem!! Overflowed, burning my oven and I had some batter leftover! I believe two 8.5 * 4 might work better for me (I am also high altitude – not sure if that effects anything. The amount of time it took to prepare – very annoyed as after an hour and a half it’s still raw in the middle 🙁
My cake also bubbled out, onto the racks and onto a sheet pan I wisely placed under the loaf pan. During cooling, the middle of the loaf cratered. I bet it all still tastes good, but I think there was too much batter & streusel for one loaf.
The recipe is amazing and helpful. Thanks for sharing!
