How to Make Blueberry Cheesecake Bars

These blueberry cheesecake bars come together in a few simple layers: a buttery graham cracker crust, creamy cheesecake filling, juicy blueberry layer, and a crumb topping.

  1. Make the crust
    • Mix graham cracker crumbs, sugar, and melted butter until evenly combined. Press firmly into the bottom of a lined pan, then refrigerate while you prepare the filling.
  2. For the streusel topping
    • Whisk flour, sugar, and light brown sugar with a fork, then add melted butter and whisk until coarse crumbs form. Set in the fridge.
  3. Make the cheesecake filling
    • Beat softened cream cheese with sugar until smooth. Add eggs, sour cream, vanilla, and a little cornstarch, mixing just until combined.
  4. Prepare the blueberry layer
    • In a bowl, toss blueberries with sugar, cornstarch, and a little lemon juice until evenly coated.
    • Tip: lightly mash a small portion of the berries (about 1/4-1/3 cup) for a more jammy texture, but don’t overdo it.
  5. Assemble the bars
    • Spread the cheesecake filling over the chilled crust. Spoon the blueberry mixture evenly over the top, then gently spread it out. Finally, sprinkle with crumb topping.
  6. Bake and chill
    • Bake until the center is set. Let cool completely, then refrigerate for a few hours before slicing.

Pro Tips for Blueberry Cheesecake Bars

  • Don’t overload with blueberries – too many berries can release extra juice and make the bars take much longer to bake.
  • Lightly mash a few berries – this helps create a more even blueberry layer, but keep most of them whole for the best texture.
  • If using frozen blueberries, add extra cornstarch – about 1 tablespoon helps absorb excess moisture.
  • Use room temperature ingredients – ensures a smooth, lump-free filling.
  • Don’t overmix the batter – mix just until combined to avoid too much air in the cheesecake layer.
  • Line the pan with parchment paper – makes it much easier to lift and slice clean bars.
  • Chill before slicing – the bars need time to fully set for clean cuts.

Variations

  • Skip the crumb topping – for a simpler version, you can leave off the crumb and bake just the cheesecake and blueberry layers.
  • Use frozen blueberries – works just as well as fresh; just add a little extra cornstarch to control moisture.
  • Add a hint of lemon – a little extra lemon juice or zest can brighten the blueberry flavor.
  • Try different berries – this recipe also works with raspberries or a mix of berries.
  • Make it as a cake instead – if you prefer a full cake-style dessert with a crumb topping, try my Blueberry Cheesecake Crumb Cake

How to Store Cheesecake Bars

Store blueberry cheesecake bars in an airtight container in the refrigerator for up to 4–5 days. Keep them chilled to maintain the creamy texture of the cheesecake layer.

For best results, slice the bars once fully chilled, then store them in a single layer or with parchment paper between layers to prevent sticking.

Make Ahead

These blueberry cheesecake bars are perfect to make ahead since they need time to cool and set completely. Bake them a day in advance, then refrigerate until ready to serve.

They actually taste even better after chilling, when the layers firm up and the flavors come together, like in my blueberry cheesecake cake.

FAQ

Can I use frozen blueberries?

Yes, frozen blueberries work great in this recipe. Do not thaw them before using, but if they are clumped together with ice, rinse them briefly under cold water and pat dry. Add about 1 tablespoon of cornstarch to help absorb extra moisture and prevent the bars from becoming too soft.

Why are my cheesecake bars too soft?

This usually happens if there are too many blueberries or too much moisture. Make sure not to overload the filling and allow the bars to chill completely before slicing. They firm up as they cool.

Do cheesecake bars need to be refrigerated?

Yes, because of the cream cheese filling, blueberry cheesecake bars should always be stored in the refrigerator.

How do you get clean slices?

For clean slices, chill the bars for several hours, then use a sharp knife and wipe it clean between each cut.

Description

These blueberry cheesecake bars are a simple dessert with a graham cracker crust, creamy filling, juicy blueberries, and buttery crumb topping. They have everything you love about a classic blueberry cheesecake, but in an easier, no-fuss bar version made with just a few simple ingredients.

Ingredients

Crust:

  • 1 1/2 cup graham cracker crumbs
  • 1/4 cup sugar
  • 5 Tablespoons melted butter

Crumb topping:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1/3 cup butter-melted

Cheesecake Filling:

  • 12 oz. cream cheese – softened
  • 1/2 cup sour cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1 1/2 Tablespoons cornstarch
  • 2 eggs

Blueberry Filling:

  • 2 cups blueberries
  • 1 Tablespoon lemon juice
  • 2 Tablespoons sugar
  • 3 Tablespoons cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×9-inch pan with parchment paper, leaving some overhang on the sides so you can easily lift the bars out later.

Prepare the crust:

  1. In a bowl, stir together graham cracker crumbs and sugar. Add melted butter and whisk with a fork until everything is evenly moistened and resembles wet sand. Press the mixture firmly into the bottom of the pan. Place in the fridge to chill while you prepare the filling.

Make the crumb topping:

  1. In a bowl, stir together flour, granulated sugar, and brown sugar. Add melted butter and mix until coarse crumbs form. Place in the fridge.

Make the cheesecake filling:

  1. Beat softened cream cheese, sugar, and vanilla until smooth. Add sour cream and cornstarch, mixing until combined. Add eggs and mix just until incorporated. Do not overmix.

Prepare the blueberry filling:

  1. In a bowl, lightly mash about 3 – 4 tablespoons of the blueberries with a fork. Add the remaining blueberries, lemon juice, sugar, and cornstarch, then stir until evenly combined.

Assemble and Bake:

  1. Spread the cheesecake filling evenly over the chilled crust. Spoon the blueberry mixture on top and gently spread it out. Sprinkle the crumb topping evenly over the blueberries.
  2. Bake for about 45–55 minutes, or until the center is set. Start checking after 35 minutes and tent with foil if the top is browning too quickly. The bars will puff up slightly while baking, then settle as they cool.

  3. Let the bars cool in the pan for about 30 minutes, then lift them out using the parchment overhang. Cool completely, then refrigerate for at least a few hours before slicing.
