Pumpkin Cheesecake with Oreo Crust
When it comes to autumn desserts, there is no better solution than pumpkin. I started my autumn season for this sort of treats a few weeks ago, but not not on this blog. I did it as a contributor for the LilLuna.com blog. Chatting with Kristyn (the author of LilLuna) and discussing many recipes, we came to a delightful conclusion to choose Pumpkin Cheesecake. Kristyn always liked photos of my cakes and as if by rule, my cheesecakes always came out perfect.
And so, it was time for the decadent Pumpkin cheesecake with Oreo crust. After I put the photos on LilLuna, Kristyn was delighted and even called me “queen of cheesecakes” in an email . But, in my delight with that email, I made a critical error. I read it to my husband Seeing how much this acknowledgement meant to me, my husband, who sees this blog as a sort of a game, just couldn’t stop teasing me! He started every day by saying “Ooooh, where is my cheesecake queen?” and in time, I became a chocolate and pumpkin queen. Of course, everything stopped the moment I threatened to uncrown him “the king of cheesecakes” which would mean that he can’t try my desserts.

Joking aside, this Pumpkin cheesecake really came out “kingly” in every way. Starting with the Oreo crust which by itself guarantees beautiful taste, and after that cheesecake filling which looked fantastic with it’s orange color, to the tasty layer of whipped cream with chocolate ganache poured over it. What else can I tell you, the images speak for themselves – and the taste, well, it followed the images way, it was simply magnificent.
And so, for the grand finale, if you want to put a sweet taste on these autumn days, I’m sure that this Pumpkin Cheesecake with Oreo Crust would really be worthy of a king Enjoy!!!

Pumpkin Cheesecake with Oreo Crust is made up of a spiced pumpkin cheesecake layer, a classic cheesecake layer, whipped cream and chocolate ganache on top. A fall-themed cheesecake recipe for your baking list!
Ingredients
For Oreo Crust:
- 24 Oreos-finely crushed (crush whole Oreo with filling)
- 1/4 cup melted butter
For Cheesecake Filling:
- 24 ounce cream cheese-softened
- 3/4 cup sugar
- 3 eggs
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
- 1 cup pure pumpkin puree
- 1 teaspoon cinnamon
- 1/4 teaspoon cloves
- 1/4 teaspoon nutmeg
For Topping:
- 1 and 1/2 cups heavy cream
- 3 tablespoons powdered sugar(or more to taste)
- 6 oz. semi-sweet chocolate-chopped
- 1/2 cup heavy cream
- 1/3 cup chocolate chips-for garnish
Instructions
- Grease the inside of the 8 or 9 inch springform pan with nonstick cooking spray and line the bottom of the pan with parchment paper. Wrap the outside of the pan with two layers of aluminum foil and bring the foil up the sides of the pan and make sure it’s tight and secure no water gets in during the baking process!!! (You can place springform pan in slightly larger pan before place it in the water bath, so you won’t have to use foil))
- Preheat oven to 350 F.
- Mix together Oreo crumbs and melted butter, press the mixture into the bottom of springform pan and smooth to get an even layer, set aside.
- With electric mixer, mix cream cheese and sugar on medium speed until smooth. Decrease the speed to low and add eggs one at a time.
- Add sour cream, vanilla extract and lemon juice and mix until well incorporated.
- Spread 1 1/2 cup of cheesecake filling onto Oreo crust and smooth with a spatula. Place in the freezer for 10-15 minutes.
- Add pumpkin pure, cinnamon, nutmeg and cloves to the rest of cheesecake filling and mix until well incorporated. Spread evenly onto plain cheesecake filling.
- Place springform pan in a roasting pan, fill roasting pan about a quarter of the way with hot water and bake at 350 degrees for 55-65 minutes, rotating once halfway through (until the cheesecake is set around the edges and slightly loose in the center). I used 8 inch springform pan so I had to bake the cake almost 1 hour 30 minutes to set.
- Remove springform pan from the water bath and set on a cooling rack to cool, then remove aluminum foil and refrigerate (at least 5 hour or overnight). When it’s completely cooled run a thin knife around the edge and take of the ring of springform pan.
- Beat 1 1/2 cup heavy cream and powdered sugar until stiff peaks form. Spread 1 and 1/3 cups whipped cream on top of pumpkin cheesecake and save the rest for garnish. Place the cake in the freezer for 20 minutes.
- Over double boiler melt chopped chocolate until completely smooth and has no lumps, then stir in 1/2 cup heavy cream(from the fridge). If the ganache is warm, set aside to cool (make sure not to spread warm chocolate ganache over the whipped cream because the cream will begin to melt and blend with chocolate) When it’s cooled completely, spread about 2/3 of the ganache onto cake to cover completely heavy cream layer, then set the cake in the freezer for 5-10 minutes. Reheat the rest of ganache and pour it over the cake to and let it dripping over the edge. Let it cool completely to set then garnish the cake with heavy cream and chocolate chips.
- Store the cake in the fridge.

This sounds amazing! I was going to do my regular pumpkin cheesecake for Thanksgiving but I will have to give this one a try!
One tip for you to try next time you make a cheesecake, when you remove it from the springform pan use a little creme brulee torch on the sides of the metal pan. This will warm the metal enough to allow it to separate from the cheesecake and you will have perfect edges 🙂 I also do this to get the bottom off of the cheesecake, place a pieces of wax paper on the top of the cheesecake and invert it on a plate, warm the bottom with the torch until you see it pop up and it comes off the bottom of the crust perfectly, leaving none of the crust behind on the pan. They taught us this in Culinary school 😀

Pumpkin Oreo cheesecake. Best Thanksgiving cheesecake ever my family was telling me I have to bring this to thanksgiving next year. Loved is so much.
This cheesecake is amazing! It was pretty simple to put together and a huge hit at Thanksgiving. The only thing to mention is that the whipped cream layer isn’t stable for a long time. I’d recommend either serving immediately or popping it into the freezer for a bit before serving. Yum!
