Banana Cake with Cream Cheese Frosting

Incredibly moist and easy Banana Cake with rich and fluffy Cream Cheese Frosting!

Moist Banana Cake Recipe with Cream Cheese Frosting 

Banana Cake is one of my favorite desserts. Addition of mashed bananas in cake batter, makes it so moist and flavorful. And if there is addition of sweet and tangy cream cheese frosting, like in this Banana Cake with Cream Cheese Frosting recipe, then it’s my kind of dessert!

How to Make a Layered Banana Cake:

First, preheat oven and grease cake pans with butter. Then in a bowl whisk together dry ingredients: flour, baking soda, baking powder and salt and set aside.

Next beat butter with sugar and brown sugar until light and creamy. Then add sour cream, oil and vanilla and mix well, add eggs and mix until combine.

Next add half of dry ingredients mix and mix until combine. Add remaining dry ingredients and mix well. Finally add mashed bananas and mix to combine.

Divide batter evenly among prepared cake pans and spread batter into an even layer. Bake until toothpick inserted into center comes out clean, about 25 – 28 minutes.

When the cakes are cooled completely prepare Whipped Cream Cheese Frosting and assemble the cake.

My favorite part about this cake is that it has a layer of whole bananas in the center.

Ingredients

Banana Cake

  • 1 cup sugar
  • ½ cup light brown sugar
  • ¾ cup unsalted butter-softened
  • 1 teaspoon vanilla
  • ¾ cup sour cream
  • ¼ cup vegetable oil
  • 3 large eggs-slightly beaten with the fork
  • 2 ¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ¼ cups mashed banana (about 2 large or 3 medium bananas)

Whipped Cream Cheese Frosting and Filling:

  • 1 cup heavy cream
  • 16 oz. brick style cream cheese-room temperature
  • 1 ½ cups unsalted butter-room temperature
  • 2 teaspoons vanilla
  • ½ teaspoon salt
  • 7-8 cups powdered sugar
  • 5-6 small bananas


Instructions

To make Banana Cake:

  1. Preheat the oven to 350 F. Grease two 9-inches round pan with butter, line the bottom with parchment paper and dust lightly with flour, then set aside.
  2. Whisk together dry ingredients: flour, baking powder, baking soda and salt and set aside.
  3. Beat softened butter for two minutes. Then add sugar and brown sugar and beat well until smooth.
  4. Then add sour cream, oil and vanilla and mix well.
  5. Add eggs and mix until combine.
  6. Next add half of dry ingredients mix and mix until combine. Add remaining dry ingredients and mix well. Finally add mashed bananas and mix to combine.
  7. Divide the batter evenly between the pans, smooth the tops and bake 25-28 minutes, or until the toothpick inserted in the center comes out clean. Cool the cake for 5 minutes in the pans the transfer to a rack to cool completely.

Whipped Cream Cheese Frosting and Filling:

  1. Mix heavy cream on high speed until stiff peaks form, then set aside.
  2. Beat together cream cheese and butter until smooth, then add vanilla, salt and powdered sugar. Add sugar gradually, one by one cup, mixing well after each addition.
  3. Add whipped cream into cream cheese mixture and mix until combined.

Assembling the cake:

  1. If the cakes are too domed slightly trim the tops. Place one cake layer onto serving plate. Spread thin layer of frosting. Arrange peeled bananas over the frosting (as shown in the picture above). Spread more frosting over bananas and try to fill all the gaps between bananas. Place second cake layer on top. Spread remaining frosting over the cake.
  2. Garnish as desired.
  3. Store in the fridge.

When I poured the batter into the pans I noticed how high it was and was impressed thinking the cake layers would be high. Nope. The cake actually came out flatter after being baked! I have no idea how this happened as I included all ingredients, such as baking soda and powder. I am en experienced baker. I’m a little disappointed that this cake is so dense and heavy.

Oh my goodness, this cake is fantastic! I made it in three 6″ pans, added walnuts and left out the banana slices and it was still divine. Love the frosting, too. So creamy and not as cloying as cream cheese frosting. Thanks so much for sharing this 🙂
