Description
These Bakery-Style Blueberry Muffins have tall, golden tops, soft, moist centers, and juicy blueberries in every bite. Chilling the batter helps create the thick texture needed for an impressive bakery-style rise.
Ingredients
- 3 cups (375 g) unbleached all-purpose flour
- 1 Tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup (57 g) unsalted butter, softened to room temperature
- 1/4 cup (60 ml) vegetable oil
- 1 cup (200 g) granulated sugar
- 3 large eggs
- 1 cup (240 g) sour cream
- 2 teaspoons vanilla extract
- 1 1/2 cups (about 225 g) small to medium fresh blueberries
- 1 teaspoon all-purpose flour, for tossing the blueberries
- Additional blueberries, for topping
- Granulated sugar, for lightly sprinkling on top
Instructions
1. Mix the dry ingredients. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
2. Beat the butter, oil, and sugar. In a large mixing bowl, beat the softened butter, vegetable oil, and 1 cup granulated sugar until creamy and slightly lighter in color. Scrape the bottom of the bowl if needed.
3. Add the eggs and remaining wet ingredients. Beat in the eggs one at a time, mixing 1 minute after each addition. Add the sour cream and vanilla extract and mix until combined.
4. Add the dry ingredients and mix on low speed just until almost combined. Finish folding the batter gently with a rubber spatula, being careful not to overmix.
5. Toss the blueberries with 1 teaspoon of flour, then gently fold them into the batter just until evenly distributed.
6. Chill the batter. Cover the bowl and refrigerate for at least 1 hour, or overnight. The chilled batter should become noticeably thick and hold its shape when scooped.
7. Preheat the oven to 425°F. Line two standard 12-cup muffin pans with 6 paper liners each, placing a liner in every other cup. Lightly spray the flat surface of the pans around the liners to prevent the oversized muffin tops from sticking.
8. Divide the chilled batter evenly among the 12 liners. Fill each liner generously, allowing the thick batter to form a tall, slightly pointed mound above the edge of the paper liner. Do not press down or smooth the batter with a spoon.
9. Press a few additional blueberries lightly into each mound of batter, then sprinkle the tops with a little granulated sugar.
10. Bake at 425°F for 5 minutes. After 5 minutes reduce the temperature to 350°F and continue baking for 15–18 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
11. Cool. Let the muffins cool in the pans for about 5 minutes. If any muffin tops have spread onto and stuck to the pan, gently loosen the edges with a thin knife. Carefully twist the muffin slightly from side to side before lifting it out, then transfer it to a wire rack to cool.
Notes
If you have only one muffin pan, bake 6 muffins at a time and keep the remaining batter covered in the refrigerator while the first batch bakes.
Frozen blueberries: Chill the batter without the berries. Fold the blueberries into the cold batter directly from the freezer immediately before scooping. Do not thaw. Expect a few purple streaks, especially with larger berries.
Blueberry size: Small blueberries distribute more evenly through the muffins and create fewer large wet pockets.
Batter shape: Do not flatten or smooth the scoops. A pointed mound helps form the tall bakery-style top.
Pan preparation: Even when using paper liners, grease the flat metal surface around the cups because the tops may spread beyond the liners.
Make ahead: The batter can chill for up to 12 hours. Bake it while cold.
Storage: Keep cooled muffins airtight at room temperature for 2 days or freeze for up to 3 months.
